This scrumptious Awadhi Mutton Curry, as the name suggests, is inspired by the legacy of Awadh. It is a rich Mughlai dish made with tender mutton pieces, a melange of spices, ghee, onion, garlic, ginger, and few seasonings. The goat-meat lovers wait for this special day to indulge in flavourful dishes that are generally a part of any Eid party. Although, you can also prepare this easy and delicious Awadhi mutton curry on any occasion such as birthdays, anniversaries, potlucks, and kitty parties. Mutton Curry is served as a main dish and can be paired with naan, roti and rice. The delectable flavour and appetizing aroma will surely make everyone crave for more. Ingredients of Awadhi Mutton Curry

250 gm mutton
50 gm ghee
2 teaspoon paprika powder
7 black pepper
2 clove
20 gm garlic
100 ml mutton stock
10 gm ginger
3 drops rose water
5 gm mutton curry powder
120 gm onion
1 tablespoon coriander powder
5 green cardamom
2 bay leaf
2 gm mace
50 gm yoghurt (curd)
100 ml tomato puree
3 drops kewra essence
salt as required
For Garnishing
handful coriander leaves

Instructions

How to make Awadhi Mutton Curry
Step 1- Chop mutton along with other veggies & herbs
Before beginning with the entire procedure, first wash and drain the mutton pieces under cold running water. Keep it aside and start by chopping the onion, garlic and ginger into fine slices.

Step 2- Saute the whole spices in ghee
Now, take a lagan pan and put it on medium flame, let it heat for a few seconds and then add two big tablespoons of ghee in it. Let it heat for sometime, now, add all the whole spices such as clove, black pepper, mace, bay leaves, green cardamom and let them crackle.

Step 3- Cook herbs with the whole spices and then caramelize the onion
After you get the aroma of all the whole spices, add chopped ginger and garlic in the spice mix. Stir them a little before adding the onions. Saute the onions until it starts caramelizing.

Step 4- Cook mutton until golden brown in colour
Keep stirring the mixture for 3-4 mins before adding the mutton pieces. Once you add the mutton, mix it properly with the spices and onion and cook it by stirring them together. Saute for sometime until golden brown.

Step 5- Add the powdered masalas and mutton stock
Now it's the time for the powdered spices, sprinkle degi mirch powder or paprika powder, mutton curry powder or nihari masala, dhaniya powder and mix well. Saute the entire mixture for 5 mins before adding mutton stock.

Step 6- Cook mutton curry with lid on for about 2 hours
Reduce the flame to low and let the mutton cook in its stock for 2 hours by covering the lid. After two hours you will start getting the appetizing aroma of mutton curry. Add yogurt, tomato puree and salt to taste. Let it cook again by covering the lid. After 10-15 mins, add kewra water, rose water and saute it for anther 15 mins. Check the seasoning and garnish with coriander leaves. Enjoy your hot and scrumptious Awadhi Mutton Curry.
